OH sweet carrot cake!



We spent a whole day cutting and grating carrots for Grandpa's 80th birthday party held at my house last Saturday! It was, and always is, fun and challenging to make the cake with so many little helpers. I just keep reminding myself that my kids will have great memories of making carrot cake just like I do! (I was my mom's little helper for many years before I became "known" for carrot cake!) Jacob is always the first in line to grate the carrots. Right before it was time to start, he begged and begged to just grate ONE carrot...I finally gave in and told him to grate one and bring it to me when he was finished so I could see how well he did. He brought one single carrot back 2 minutes later to show me, and to my surprise, it was a perfectly grated carrot! He smiled from ear to ear showing it to me. I smiled back gave him a big hug and said, "You're hired!" He was so excited and then looked at me and said, "Mom, I don't know what that Hired means..." I just laughed and explained that it meant he got the job! He ran back into the kitchen and proceeded to grate a whole bag of carrots! I cannot believe that my 5 year old can grate carrots so well...next time, carrot cake will not seem so hard! We just love that Jakey, dimples and all!

i cant believe that he is 5 time sure does fly... I cant believe i use to babysit when alex was that age!

MAN I LOVE YOUR CARROT CAKE! How about you post that recipe........why'd you make SO many?

will work for carrot cake...(at least Kim Johnson carrot cake, that is!) keep that in mind next time you need another helper!
